HISTORY AND PHILOSOPHY
A passion for sourdough and a love for baking. We select the best local flours from organic and biodynamic farms. We only use our own mother yeast and mature the dough to obtain a light, tasty, healthy pizza. Our ingredients come from producer friends, as do the farm beers and wines. At the pizzeria ‘Bottega’ you always come back for desserts too! A high quality pizza in a renowned location.
The producers who supply the ingredients for our pizzas are Angela Saba, Radichino, Corzano and Paterno, Le Capanne for sheep and goat cheeses, the Caseificio La Maremmana for buffalo mozzarella and burrata, Aia della Colonna, Il Poggiolino for cured meats, the Az. Agricola Montegrappa for tomato base, and the grains of agricultural district D.R.A.G.O in the metallifere hills.
